José Manuel Zafra

José Manuel Zafra has been surrounded by the world of cooking and hospitality since childhood, a sector to which his father has dedicated a large part of his life (currently at Cervecería Gourmet). He studied cooking and gastronomy in Cazorla and later completed a six-month internship at Dani García’s Calima restaurant (two Michelin stars). He also spent time at Aponiente with Ángel León (two Michelin stars) and at La Terraza del Casino with Paco Roncero (two Michelin stars).
After a stint in his hometown, at Cantina La Estación in Úbeda, he had the opportunity to join Ángel León’s team in Barcelona, where he specialises in seafood.
